Fish and shellfish are purchased daily from ports around the UK and throughout Europe, predominantly from France and Spain. These stocks are despatched overnight from ports in temperature-controlled vehicles for processing and distribution next day.

Processing of fish and making up of orders goes on throughout the night for delivery next morning. Purchases are also made daily from Billingsgate fish market to supplement fish purchased from coastal ports and to take advantage of special buys in our foremost fish market.
